We have always loved the wacky cakes, also known as depression era cakes and this one is a winner too. We added apples, used apple juice and it came out fantastic.
Why Is It Called Wacky Cake
It’s called wacky cake because it is made without eggs, milk, or butter! Back in the Depression era, these things were hard to come by, so this cake was born. It’s made with oil, and many people are always shocked at how this cake turns out.


How Does It Rise Without Eggs?
This recipe has baking soda and vinegar and that is what makes this cake rise. As you can see from the photos, this cake had no issue rising. It was perfect and had a wonderful texture. We will make this one again and again.
Does Wacky Cake Freeze Well?
Yes, you can easily freeze this cake! Wrap tightly in plastic wrap and store in a freezer-safe container, and you are all set. It’s a great cake for freezing since it has no frosting.

Apple Wacky Cake (No Eggs, Milk or Butter)
This Apple Wacky Cake is moist, simple, and full of warm apple spice flavor. Made without eggs, milk, or butter, it’s a vintage Depression-era favorite.
- 1 1/2 cups all-purpose flour
- 1 cup white granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1 cup apple juice can use 1 cup water
- 1 tablespoon apple cider vinegar
- 5 tablespoons olive oil can use vegetable or Canola
- 1 1/2 teaspoons vanilla extract
- 1 cup peeled and shredded or chopped apples I used Gala. You can use what you like
- 1/2 cup chopped walnuts can use pecans

Whisk together flour, sugar, baking soda, salt, cinnamon and nutmeg in a bowl.

Add apple juice, apple cider vinegar, olive oil and vanilla extract. Stir with a spoon. Stir in apples and nuts.

Spray a 8×8 or 9×9 baking dish with cooking spray and add the batter.

Bake in a preheated 350 degree oven for 40 to 45 minutes until center tests done.

Let cool for 10 to 15 minutes. Sprinkle powdered sugar on top or can frost with your favorite icing.

Makes about 9 pieces of cake depending on how you slice it. I set the serving at 4, since people will probably have 2 pieces.
